<h2>海苔の歴史おさらい</h2>
<p>日本では、海苔は1300年程前から食べられていた様ですが、今のような紙状の形になったのは養殖が始まった江戸時代と言われています</p>
<p>大森が海苔養殖の発祥と言われていますが、この大森で生産された海苔が浅草のりです</p>
<p>なぜ大森の海苔が「浅草のり」というかは諸説ありますが、当時から観光で人気のあった浅草寺の門前でたくさん売られていたので&#8221;浅草の海苔&#8221;⇒&#8221;浅草のり&#8221;という説を本サイトでは推しています</p>
<p>学問上の標準和名「アサクサノリ」と言うのは、明治になってから日本の海藻学の祖と呼ばれる岡村金太郎博士が命名したということです</p>

<p>戦後は、増えていく需要に対応する為、養殖に適したスサビノリに変わり、現在ではすっかりその座は奪われ、棲み処の無くなったアサクサノリは減少してしまいました</p>
<p>昭和37年に水質汚染による品質悪化と東京湾埋立計画により、漁業権を返還し約300年続いた大森の海苔生産はその歴史に幕を閉じました</p>
<h2>海苔の養殖とその道具</h2>
<p>※大森での海苔養殖の最終期に行われていた方法でご紹介します</p>
<p>のり作りは15夜に始まり春の彼岸に終わります</p>
<h3>１．15夜に千葉で種付け &lt;&lt;採苗&gt;&gt;</h3>
<p>15夜になると千葉（浦安）に種付けに行きます</p>
<p>明治10年代に発見された方法で、種（胞子）を付けるのに適した場所で種付けし、約1か月後に育成に適した大森の漁場で育てる&#8221;移植&#8221;が行われた</p>
<p>戦後、木や竹のヒビから網に変わったことによって、ヒビの運搬も容易になり、福島（松川浦）や宮城（松島湾）などの遠方でも種付けが行われるようになりました</p>

<h3>２．のりを育てる&lt;&lt;育苗&gt;&gt;</h3>
<p>種付けが終わった網を持ち帰り、くじ引きで決められた所定の場所に各々種の付いた網を張り約１か月間のりを育てます</p>

<h4>戦前の海苔養殖</h4>
<p>戦前は網ではなく、木ヒビや竹ヒビを海中に建てて、海苔を育てました</p>
<p>海苔下駄という高い台の付いた下駄を履いて海に入り、振棒という先に尖った鉄のついた道具でヒビを建てる穴をあけて、そこにヒビを建てます</p>

<h3>３．海苔の収穫・乾燥</h3>
<p>海苔の収穫は寒さが厳しくなる11月の下旬からはじまります</p>
<p>1～2月にピークを迎える為、正月休みも返上して収穫作業に励んだという事です</p>
<p>繁忙期には、子供たちも駆り出され、学校にも行けなくなるため、大森地区では&#8221;朝学（ちょうがく）&#8221;と言って朝5～7時半に授業を行ってくれる制度があったそうです</p>
<p>また、その時期は地方からも手伝いの人たちが助っ人に来ていました</p>
<h4>①摘み取り（手入れ）</h4>
<p>摘み取りは極寒の時期にもかかわらず素手で行いました</p>

<p>海苔はぬるぬるして手袋をしていると摘み取れないからです</p>
<p>作業の中でももっとも辛い仕事だったのではないでしょうか</p>
<p>摘み取りの作業時に着ていた着衣はボータと呼ばれるツギハギの服で水に入れる右手の袖は短くなっていました</p>

<h4>②海苔切り</h4>
<p>ワカメや昆布のような形状の海苔を紙状に成型するには、細かく刻む必要があります</p>
<p>この作業は収穫した日の深夜1:00から始めます</p>
<p>天日乾燥をする為に、海苔付け作業までを朝までに終わらせなければならないからです</p>

<h3>４．天日干し（乾燥工程）</h3>
<p>日が昇る頃に海苔簾に付けた海苔を天日干しにします</p>
<p>充分に乾燥が進むとパリパリと音がしたそうです</p>
<p>乾燥したら夕方の湿気を吸収してしまう前に取り込みます</p>

<p>乾燥して剥がされた海苔は10枚1組にして半分に折り出荷しました</p>
<h2>まとめ</h2>
<p>ここに紹介した道具たちは、昭和37年まで大森の生産者が実際に使用していたものや、その模型です</p>
<p>船は専門の船大工さんですが、ほとんどの道具を生産者自ら手作りしていましたので、当時の大森には海苔道具を作る為の材料問屋さんがたくさんあったそうです</p>
<p>海苔の原料はアサクサノリからスサビノリに変わり、発祥の大森での養殖は終わってしまいましたが、現在も江戸から始まったあの形の海苔は各地でそのまま受け継がれています</p>
<p>パリパリの海苔で食べるアツアツの白いご飯は日本人のソウルフードと言えるのではないでしょうか</p>
<p>先人の知恵や魂を文化としていつまでも語り継いでいきたいものです</p>
